Jean Immerwahr’s Cauliflower and Peas
 
 

Serves 4-6 -- delicious main dish for a vegetarian meal

Time: 30 minutes


1 lb cauliflower, broken into med. florets

2 med onions, chopped thinly

2 cloves garlic, minced

1” piece ginger root, minced

2 cups canned tomatoes, cut up, with juice

Salt to taste

 

1.  Heat oil in medium saucepan, cook onions till transparent.


2.  Add turmeric, ginger, garlic, and chili powder--cook a few minutes, then add tomatoes and cauliflower, stir in well.  Add 1/2 cup water.  Cook covered until half-tender.


3.  Add peas.  Salt to taste and cook covered till cauliflower is tender.  Add garam masala.  Serve hot, either alone or with rice, as a curry.

1/2 cup peas

2 tbs oil

1/2 tsp red chili powder

1/2 tsp turmeric

1 garam masala
