Jean Immerwahr’s Rice with Vegetables
Pilau
 
 

Serves 8

Time: 45 minutes


1 1/2 cups long grain rice

(do not use “instant” variety)

1/2 cup onions

1 cup fresh or frozen string beans

2 med. carrots, diced

1/2 head small cabbage, shredded

Salt to taste

 

1.  Heat oil in deep skillet.  Add cloves, cinnamon, turmeric and cumin seeds.  Fry a few minutes.  Add onions, cook a few minutes.


2.  Add the rice, fry a few minutes, stirring.  Add boiling water to at least two inches above rice.  Add salt, bring to boil quickly.  Add vegetables.  Cover, turn heat low.  Cook til rice is nearly done, adding more boiling water, if necessary.  Remover cover for last few minutes to dry rice.


Peas, even potatoes may be added to this pilau.

2” piece of cinnamon, splintered

8 whole cloves

1 tsp cumin seeds

1 tsp turmeric

2 tbsp oil

boiling water
